Welcome to SMOOTHIES 101 • HOW TO USE THIS ISSUE: Whipping up a wide range of flavorful smoothies is simple with our recipes. Most make two, but some serve only one or as many as four. Each batch is limited by the capacity of your blender, so to serve more people, you'll have to make additional batches, rinsing out the blender between each. The bonus of making a whole recipe for only one person is that you have some to freeze for later (see our make-ahead guide on p. 11).

EQUIPMENT • Only one piece of equipment is essential for making a smoothie: a blender. But a few other pieces of gear can make your experience more effcient and enjoyable. Here’s what we use in the Test Kitchen.
